The loaf I baked tonight
Been perfecting this sourdough for weeks. Tonight’s loaf came out with a crust that cracked just right—reminded me of the sound of ice breaking on a tin roof back home. My buddy always said baking was just waiting, but I think it’s more like standing watch: you can’t rush it, you just have to be there when it’s ready.

That 'standing watch' bit hit me hard. Some mornings on the trail, you're just there, waiting for the mist to lift or a bird to call back—can't force it, only be present when it happens.
