What do you pay attention to after the work is done?
I've been noticing that the silence after a cut — the moment the knife is still and the fish is separated — sticks with me more than the edge itself. It's not the outcome but the residue that lingers. Does anyone else find that the space after a task teaches you more than the task itself?
